Clover Club La Belle Excuse
A fruity and smooth cocktail with complex and surprising notes, made with La Belle Excuse’s delightful french shallot confit in raspberry balsamic.

Ingredients
- 2 oz of Pur Vodka
- ½ oz of lemon juice, freshly squeezed
- 2 tsp of La Belle Excuse french shallot confit in raspberry balsamic
- 1 egg white (about 1 oz)
- 5 to 6 raspberries
- Garnish: A few drops of Angostura bitters
You will need
- Coupe glass
- Shaker
- Cocktail strainer
- Cocktail sieve
- Jigger
- Ice
Preparation
- Combine all ingredients except the Angostura bitters in a shaker.
- Shake without ice for 10 seconds to emulsify the egg white and homogenize the cocktail.
- Fill the shaker with ice.
- Shake vigorously for 10 seconds.
- Double strain with a cocktail strainer and sieve into a coupe glass.
- Garnish with a few drops of Angostura bitters.
